He was thinking it was a calcium deficiency, but I don't think that's it.

With NO3 and PO4 levels at 0.0 your plants are starving. As they grow they're using up what's in the leaves at the lower levels to put on new growth at the meristem. If you're in a place where you can easily get Nitrate and Phosphate additives I would definately do so. If not, you're best bet is to reduce the amout of light and feed your fish a lot more.
