I don't heat my red cherry shrimp tank at work but the heat is pretty
constant. It stays in the low 70's. Same with my Endler's tanks and they
breed like little rabbits.

For a little one gallon tank, I'd consider Heterandria formosa also. Some
of the little micro-rasboras (Boraras etc) might be candidates, but I've
only tried them in 10 gallon tanks. I think they might be somewhat
territorial so 1 gallon might be too small for a group.
