Hi Heather, I don't much about it, but a buddy of mine has had a group 
of white ducks 'free ranging' in his backyard in Port Townsend for 
quite a few years. I get a big kick out of them every time I visit. 
Although I haven't seen them eat water lettuce in particular, I have 
seen them eat all kinds of other stuff (from flies to grass) and 
they've never been sick to my knowledge. I can ask him more questions 
if you need it.

ps. I do know that many of the nigthshade plants (solanum genus) are 
poisonous to humans. But they're not exactly aquatic plants either.
