sounds like overkill to me, but if you've got the energy for all that 
it cant hurt. Depending on what fish you have, if the fish aren't going 
to be in the 5gal. bucket for more than a day I would say you're fine. 
And 5-7gallons of water from your original set up should be adequate.

Depending on design: I've had coolers that were pretty water tight, but 
that means oxygen tight as well. And I've had coolers that weren't 
designed to hold water at all.
