Whatever is going on, CO is probably not your problem.

I can believe that in a small enclosed office, the CO2 feed to a large
aquarium might produce a detectable amount of gas, if the CO2 was not being
adequately dissolved in the water.

You have an overflow and a wet/dry filter? Churning water will liberate CO2
so it may be that your tank is not efficiently using the gas.

What's the CO2 reading in your tank--do you have a drop checker? And how
much do you inject?
