Amit,
Hard, alkaline water from the tap can be pH7.2. When water is in pipes,
it's not exposed to air and the natural air/water gas exchange does not
occur. As a consequence, CO2 level is relatively high and Oxygen, low
and this causes a relatively low pH. Once harvested, tap water will
elevate to above pH8 in a day's time. Try an experiment with a glass
full of tap water. Our city water department guy told me this.
