I'm not familiar with the product you are talking about, but gypsum is often used/sold as clay breaker/conditioner. Gypsum is essentially calcium sulphate, and is slightly soluble, so will add some calcium and sulphate ions to your water, which would explain the increased GH (from calcium) but stable KH (sulphate not carbonate).
