Greg, I've heard of this before, almost always happening with males. It seems that the bones of the jaw lock in an open position. If the fish can't unlock the bones the fish can't eat and slowly starve. Hobbyists who try to unlock the jaw for the fish usually end up damaging the jaw even worse. If it were my fish, I would give it a week to see if it can unlock the jaw by itself. If I see it can't eat, then I would destroy it in a humane way.
