It is normal for your water pH to drop once in the tank.  Water suppliers
(in the UK at least)are required to supply water that is alkaline as this
is less likely than acicdic to strip metals such as copper from the pipes
that transport the water around.  I believe this is done by adding small
amounts of chemicals which dissipate once the water is out of the pipe and
free standing.  The water then reverts back to it's "natural" pH.

The action of fish faeces also has an acidifying effect although your
excellent water changing should gid rid of this.
