What we've found in architectural situations is that it is not the fact that the wood gets wet that causes the rotting problems, it is that it doesn't get the chance to dry out between dousings. Any sort of plastic product is likely to compound the problem. It would be impossible in this application to prevent any water at all from getting in. The wood moves too much due to moisture and temperature factors. The movement friction would cause leaks. Of course that would be a pre-assembly process but I've contemplated taking my racks down, dipping/coating them and putting them back up.
