I would just fill it up with a hose on top the frig and see how it behaves
as the weight increases.

Depends on the fridge, but I wouldn't, unless you keep the 29 half full :-)
If the surface area  is the same for a tank (a 15 is 1 foot by 2 feet, a 29
is 30" by 1 foot, usually), the depth doesn't matter for most fish. It's why
killi people keep so many fish in shoeboxes and so forth -> they have the
same footprint as much larger tanks, yet 'detritus tolerant' fish like
killies don't really need the extra volume. This works for most fish, too.
Big waste producing, "thick" fish like cichlids, goldfish and catfish do
benefit from the extra gallonage, though. "The solution to pollution is
dilution" in their case (though I'd still opt for max surface area over
depth.)
