Indeed mine is above the substrate.  The long thin roots come out the side
and go deep into the substrate making it look as if the bananas are floating
there.  The odd thing of course is that the plant looks very visible healthy
at the root and leaf level, just not the banana part.

  I don't know how you planted but I heard you are suppose to keep the
"banana part" of root tube above the substrate.  It usually have thinner
more root looking white root come out near the tip of banana which should go
under the gravel/sand/mud whatever.
  Also it likes higher light and warmer temp as I hear they are either
native of Florida or just grow crazy like weed at Florida.
