Now that I have the book (thanks Mike Evans!), it is pretty obvious that the photos have been "doctored" in some way, maybe just through the reproduction process used by the publisher. The texture of the photos (a fine sparkly sheen) is clearly not that of the fish. However, the colors could be real as I've gotten some similar strange shots playing with the flash location. I'm still annoyed though. I appreciate artistic shots, but the real utility of fish photos is ID'ing fish, for which many of these are useless. It's still a nice book though.
