I had a male Cac that lived over two years.  I have found that Apistos are
at their peak for breeding while they are young.  Probably before they are
the fully developed adults you get at the outlets.

I would go for the trio.  Decorate the tank with plenty small pots.

I never use dither fish in my breeding tanks, I may be the exception though.
