Clay-
     That fits well with my theory about yours being a skin fluke problem. The
fish can have clamped fins for quite a while before dying, water changes
aggravate the flukes, and Ich medication bothers the flukes but usually doesn't
kill them.

But of course african cichlids will shimmy like that if the water is wrong
somehow. Maybe you could get a skin-slime sample to someone with a microscope
and have them look for flukes.

Or you could try treating with Fluke Tabs.
